When you need a recipe that is as simple as it is delicious - this crisp is the answer. Besides being easy, it's also relatively healthy - unless of course you add the vanilla ice cream! This dish is excellent right out of the over or made a day ahead.
INGREDIENTS
1 cup Rolled Oats
3/4 cup Chopped Pecans
1/2 cup Almond Meal
1/2 cup Unsweetened Flaked Coconut
1/4 teaspoon Salt
1/4 teaspoon Cinnamon
1/4 cup + 2 tablespoons Olive OIil
1/3 cup Local Honey
4 cups Blueberries
Preheat oven to 350 degrees. Combine oats, pecans, almond meal, coconut, salt, and cinnamon in a large bowl. Add the olive oil and honey. Stir until well mixed. Good luck not eating this delectable mixture!
Grease 8x8 or 9x9 baking dish. Arrange blueberries in dish. Top with the oat mixture. Bake 30 minutes or until top is golden brown and has firmed up slightly. Vanilla ice cream takes this dish over the top!
