I love baking and have worked to reduce the refined sugar in most of my recipes by substituting honey! Remember to adjust if you make subs because honey is sooo much sweeter than sugar. You're also swapping a dry for a wet. There are lots of hints on Pinterest and Google!
I love this recipe for holiday (Valentine's, Easter, Halloween, Any Holiday!) decorating...because the cookies are only mildly sweet. If you put royal icing on them they are still edible without being over the top!
